Ingredients:

- 6 large egg whites - 1 1/2 cups superfine sugar - 1 teaspoon cornstarch - 1 teaspoon white wine vinegar - 1 teaspoon vanilla extract - 1 cup heavy cream - 1 pound fresh fruit (such as berries, kiwi, or mango)

Instructions:

1. Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper. 2. In a clean bowl, beat the egg whites until they are foamy. Gradually add the sugar, beating until stiff peaks form. 3. In a small bowl, whisk together the cornstarch, vinegar, and vanilla extract. Add to the egg whites and beat until combined. 4. Spoon the meringue onto the prepared baking sheet and shape into a circle, about 9 inches in diameter. 5. Bake for 25-30 minutes, or until the meringue is golden brown and dry to the touch. 6. Let the meringue cool completely on the baking sheet. 7. Whip the heavy cream until stiff peaks form. Spread the whipped cream over the meringue. 8. Top with fresh fruit and serve.

Tips:

- For a taller pavlova, use a larger baking sheet. - To make sure the meringue is cooked through, insert a toothpick into the center. If it comes out clean, the meringue is done. - Let the pavlova cool completely before serving.
